Hi omnisysadmin,

The answer is yes, you can track the emails in your organization. You can refer to the following methods.

1. You can use delivery report to track delivery information about messages sent by or received from any specific mailbox in your organization. For detailed information, please take a look at:

2. If you’re using Office 365 for enterprise (E Plan), you can also use transport rule to track the emails. You can copy (Cc) all the messages to your Office 365 account from now on:

1) Select Apply to all messages.

2) Select Add recipients.

3) Select your email account from the address book.

3. For E plan users, it is also available to track the emails in Forefront Online Protection for Exchange (FOPE) side:

1) In Exchange Control Panel (ECP), on the Mail Control tab, click Forefront Online Protection for Exchange.

2) Once logged in, click the Tools tab and then click the MessageTrace tab.

3) In the Message Trace tool, enter the search parameters – in this case, enter the sender and recipient addresses.
